Who doesn’t love an Anzac biscuit!
This tradition began during wartime and was based on ingredients that were easy to come by, and the end product also lasted the time and distance if they were sent to our troops serving overseas.
The love for our national bickie (cue Kiwi’s claiming the original recipe) continues and the humble homemade Anzac biscuits make a great snack or addition to any lunch box.
Now there are all manner of healthier versions out there on the inter web, but here’s the thing. Sugar is sugar is sugar, no matter how it is disguised. Our bodies recognise it as sugar and our insulin response is the same whether we are using sugar, organic sugar, honey, molasses, coconut, rapadura, maple syrup, rice malt syrup (although this is a great alternative for those sensitive to fructose) and so on.
So let’s not pretend that swapping out sugar for another form of sugar is going to miraculously make things a whole lot better. It’s a biscuit.

Now having said that, I have included the Healthy Chef version for some variety and a link to a gluten free version if you need one.
Country Women’s Association
2 cups rolled oats
½ cup sugar
1 cup plain flour
½ cup melted butter
1 Tbsp golden syrup
2 Tbsp boiling water
1 tsp bi carb soda
Combine dry ingredients
Mix golden syrup, bicarb and boiling water together until they froth
Add melted butter
Combine butter mix and dry ingredients
Drop teaspoons onto a lined tray, allow room for spreading
175 g / 1 ½ caps rolled oats
60g / ½ cup desiccated coconut
60g / ½ cup chopped almonds
3 Tbsp macadamia nut oil
3 Tbsp raw honey
1 tsp vanilla extract
¼ tsp baking soda
1 Tbsp water
Preheat oven to 160C
Combine oats, coconut and almonds in a food processor/thermie
Add oil, honey, vanilla and baking soda
Mix well for about 15-30 seconds or pulse until just combined
Add water and process again
Form into 20 small biscuits and place on a lined baking tray
Flatten down with enough room around each biscuit
Bake 2—30 mins until golden brown
Cool and enjoy!
