Ingredients
- 150g butter
- ¾ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup wholemeal, spelt or buckwheat flour
- 1 tsp baking powder
- pinch salt
- 2 tbsp cacao
- 3 cups oats
- ½ cup choc chips (optional)
Method
Cream butter and sugar together with a wooden spoon, or with a mixer. Scrape down and add in the egg & vanilla for another minute or until well combined and the sugar is no longer grainy.
In a large bowl mix flour, baking powder, salt and cacao together. Add in butter mix and stir until combined. Add in the oats and the choc chips and keep mixing.
On a lined baking tray, spoon mix together to make approx. 28 cookies. Bake on 160 degrees for 15 minutes. Allow to cool on the baking tray & store in an airtight container for up to a week…if they last that long!
